Breakfast with a twist

. 2 eggs scrambled
. 1 toast sourdough slice
. Mushrooms and feta

*optional, add some coriander
Banana & Berry Mixed Seed Pancakes
.1 med banana (mash in bowl)
.2 eggs (add to same bowl)
.1 tsp chia seeds
.1tsp Petipa seeds
.2tsp of rolled oats

*optional: choc chips
Mix all together and add to hot non stick pan

Toppings 🍌
. Greek yoghurt
. Almonds
. Raspberries (I buy frozen)
Brekky Bombs
These breakfast egg muffins have saved me so much time with my early morning starts.

🥄 cut each whole grain wrap into 4 triangles
🥄place each triangle in a cupcake tray (make sure to lightly oil lining of tray first so they don’t stick)
🥄mix into the bowl approx 7 eggs, chopped up spinach, Capricorn, other veg you like, and some cheese
🥄 add evenly into each wrap
🥄 cook time ~15-20min

Makes 10 and can be frozen
Morning Mushrooms
Simple and Quick

.1 Slide toasted sourdough
. 1/2 cup chopped mushrooms
. 1cup raw spinach

Cook mushrooms in pan for 5 mins before adding spinach

*optional, added chilli and feta

Chickpea Popcorn
Roll around in olive oil (not you, the chickpeas 😂)
Sprinkle paprika, plus other seasonings and herbs you like
Roast in the oven

Check on every 10mins.

Warning: chickpeas will pop!
Roasted Pumpkin
Perfect as a side to a main meal or tossed through a salad

Keep skin on for the fibre

. Chop into long segments
. Drizzle with extra virgin olive oil
. Sprinkle of salt and pepper
. Sprinkle herbs and spice
to taste

Cook until soft, slightly golden brown
Fancy Double C (cheese & crackers)
When you're lacking snack idea, this is the one for you

. 4 multigrain crackers
. Chopped cherry tomatoes
.beetroot dip
. Cheddar cheese thinly sliced

Great source of fibre, protein, vitamins & minerals to keep you going until the next meal

2 x cups of rolled oats
1 cup self raising flour
1/2 cup of mixed seeds
2 tsp of chia seeds
1scoop protein powder (optional)
4 tbsp honey
1/4 cup of coconut oil or olive oil
1/4 dark choc buttons
1 tsp baking soda
1 egg

🍊 I grated the zest of orange because I love chocolate and orange together.

Banana Bread
• 140g wholemeal flour
• 100g self-raising flour
• 1tsp bicarbonate soda
• 1 tsp baking powder
• 300g mashed banana
• 4 tbsp agave syrup or maple syrup or honey
• 3 large egg
• 150ml pot low-fat natural yoghurt
• 25g chopped pecan or walnuts to top
